Monforte Viennoiserie is small-batch pasticceria in Carlton North, Melbourne that creates European-inspired seasonal pastries & jams.
All our products are made on-site and are created to change with the seasons, making the most of produce when it’s at its best and most flavourful; indulging in bright stone fruits and berries when they appear in summer, and leaning on the abundance of apples, pears and citrus in winter.
Our ingredients are sourced as locally as possible, with fruits & vegetables procured from Victorian farms, butter from LardAss; a producer on the Bellarine Peninsula and sustainably grown, organic flours from New South Wales. Our batch brew is made with beans roasted by Everyday Coffee and chocolate is supplied by Melbourne-based bean-to-bar chocolaterie Birdsnake.

My desire to become a chef was reinforced after spending school half term in the kitchen of the Eyre Brothers, London with chef-owner David Eyre.
Upon leaving school, I embarked upon an apprenticeship at Hix in Farringdon, before producing desserts at the Boundary in Shoreditch. I soon discovered my passion lay not in service kitchens but in bakeries, and I took a position at Violet working for Claire Ptak, producing cakes for her shop, weekly market stall and events.
I moved to Melbourne aged 21 and soon after assisted Boris Portnoy with the opening of All Are Welcome in Northcote, where I learnt viennoiserie and which finally led me to opening my own tiny, long-dreamt of pasticceria.
